(8 oz.) PHILADELPHIA Cream Cheese, softened 1 egg 2 Tbsp. sugar 48 Mini OREO Bite Size Cookies 1-1/2 cups thawed COOL WHIP Whipped Topping HEAT oven to 350°F. PREPARE cake batter as directed on package. Mix cream cheese, egg and sugar until well blended. SPOON half the cake batter into 24 paper-lined muffin cups. Top each with about 1-1/2 tsp. cream cheese mixture and 1 cookie; cover with remaining cake batter. BAKE 19 to 22 min. or until toothpick inserted in centers comes out clean. Cool 5 min.; remove from pans to wire racks. Cool completely. FROST with COOL WHIP. Top with remaining cookies. In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and sugar on medium-high speed until light and fluffy, about 2 minutes. Mix in the molasses and egg until combined. Add in the dry ingredients and mix just until incorporated. Cover the bowl and chill the dough for at least one hour. Preheat the oven to 350° F. Line baking sheets with parchment paper. Roll the dough out on a lightly floured work surface to about ¼-inch thickness. Cut into desired shapes with cookie cutters. Place the cookie shapes onto the prepared baking sheets, about 2 inches apart. Bake for 10 minutes, rotating the pans halfway through baking. Remove from the oven and let cool on the baking sheets for 10 minutes. Transfer to a wire cooling rack and let cool completely. Sweet Little Baby Pies The perfect little sweet for spring festivities Ingredients: 1 (15-ounce) package refrigerated pie crusts 1/4 cup (4 tablespoons) butter, melted 1 cup firmly packed brown sugar 2 tablespoons all-purpose flour 2 large eggs, lightly beaten 1 teaspoon vanilla extract 1 cup finely chopped pecans 1 (8-ounce) package toffee bits Directions: Preheat the oven to 350 degrees F. Lightly coat mini-muffin tins with non-stick cooking spray. Unroll the piecrusts onto a lightly floured surface. Roll each round into a 15-inch circle. The pastry will be very thin. Cut out circles using a 2-1/4-inch fluted or round cookie cutter. The little rounds of dough should be just the right size to push into mini-muffin tins, covering bottom and sides. Combine the melted butter, brown sugar, flour, and eggs in a mixing bowl, blending well. Add the vanilla. Stir in the pecans and toffee bits. Spoon the pecan filling evenly into the pie shells. Bake for 15 to 20 minutes, or until filling is set and crust is lightly browned. Cool in pans on wire racksfor 5 to 10 minutes. Remove to wire racks to cool completely. Makes 4 to 5 dozen. Sue’s Tips: The baked pies freeze well so they can be made up to two months ahead of time. Use the tip of a sharp knife to gently nudge the little baked pies from the tin.

So the other two members of my house gave it a very good rating. My niece also enjoyed her cupcakes 🙂 If you will note, I only made 12, so there was enough to pour into a bread pan to make a mini cake for our family. This one will more than likely disappear w/o having to waste 🙂 Strawberry Mascarpone Frosting Ingredients: 1/4 cup softened butter 1 8 ounce container mascarpone, at room temperature 1/2 cup fresh strawberries, pureed 2 tablespoons strawberry jam 4-5 cups powdered sugar Directions: Cream butter and cream cheese in an electric mixer until soft and fluffy, about 2 minutes. Add the strawberries and jam. Mix until combined. Add the powdered sugar, 1 cup at a time until the frosting has the sweetness and consistency you desire.
