Crustless Mini Quiches 16 oz Egg Beaters Garden vegetable, refrigerated egg substitute 16 oz Friendship 1% Milkfat Lowfat Cottage Cheese 2 item(s) egg 1/4 cup(s) whole wheat flour 1/4 cup(s) all-purpose flour 1 cup(s) cooked onions 1 cup(s) low-fat shredded cheddar cheese 1 cup(s) tomato(es) 1 cup(s) mushroom(s) 1/2 cup(s) parsley 1/2 cup(s) fat-free skim milk 1 tsp baking powder 1/2 tsp table salt 1 spray(s) cooking spray 1 cup(s) cooked broccoli Preheat oven to 400 Beat egg substitute and eggs in a large bowl. Add 3/4 cup cheese, milk, flour, baking powder, salt and cottage cheese. Heat large nonstick skillet over medium-heat. Coat pan with nonfat cooking spray. Add chopped broccoli, mushrooms, tomatoes and onions (any veggies you like- chopped spinach is great also). Add cooked veggies and parsley to egg mixture. Spray muffin tin with nonfat cooking spray. Pour mixture into 12 muffin tin (makes 2 batches). Top mini quiches with remaining shredded cheese and cherry tomatoe slices for garnish. Bake at 400 for 10 minutes then reduce to 350 for another 15 minutes until lightly browned and toothpick comes out clean. These bran muffin recipe is a wonderful alternative to a slice of bread or toast for a quick breakfast, lunch or snack. It 's also a great idea to add a box lunch.

These muffins are great because they provide a lot of soluble and insoluble fiber.
Insoluble fiber keeps the intestines healthy – helps prevent many types of cancer. Soluble fiber is ideal for controlling cholesterol levels and may also help to reduce.

This muffin recipeis very versatile. You can easily add some grated carrot, apple or mashed banana to vary the taste and to add some extra goodness. You can also add some nuts and seeds in a healthy essential fatty acids strengthen the brain, have been shown to effectively increase the performance of children in school and, of course, is very beneficial for adults to be in the same way. These fats are so important that your body you want, if they can get.

Ingredients:

* 750ml (3c) bran

* 300ml (1 1/4c) whole wheat flour

* 60 ml (1/4c) oat bran

* 125ml (1/2c) sugar

* 10ml (2t), baking powder (sodium bicarbonate)

* A pinch of salt

* 2 eggs

* 500ml (2 c), skim milk or buttermilk

* 60 ml (1/4c), oil (try canola oil)

Directions:

1. Preheat the oven to 200 degC (400 degF).
2. To give all the dry ingredients in a bowl.
3. Add eggs and milk or butter and milkOil.
4. Mix until just combined.
5. Depending on the climate, you may need to add a little 'more milk. The mixture must not be rigid.
6. The mixture of greased muffin tins and bake for 15 to 20 minutes, but until cooked.

Try some apple sauce and nuts, seeds or spices a bit '. 5ml Speaking of seasoning, adding (1t) of cinnamon would also taste delicious. Bake about 12 minutes or until lightly browned and toothpick inserted into centers comes out clean. Remove cupcakes from pans; roll in sugar mixture until completely coated. Terri, an employee with The State Bank of Wynnewood (Okla.), shares one of her favorite recipes–Pecan Pie Mini-muffins–in this episode of “Bank Kitchen Recipe”. The recipe follows… PECAN PIE MINI-MUFFINS – one (1) cup of packed, brown sugar – 1/2 cup of all-purpose flour – one (1) cup of chopped pecans – two (2) whole eggs – 2/3 cups of real butter First, preheat an oven to 350 degrees Fahrenheit. Next, in a large mixing bowl, combine the brown sugar, flour, and pecans. Set aside. Then, melt the butter (allow it to cool); beat the eggs in a separate dish and blend with the melted butter. Then, add the butter-egg mixture to the dry ingredients mixture. Stir together thoroughly by hand. Finally, using a teaspoon, place batter into a mini-muffin pan filling each tin 2/3 full. Bake at 350 degrees for approx. 20-25 minutes, or until muffins are firm. Remove from oven, and allow muffins to cool before removing them from the pan. Enjoy! Note: this recipe makes two-to-three dozen mini-muffins.
