Mini Quiches Pre-heat oven to 325 degrees What Youll Need: A 12 Cupcake Pan Cooking Spray of Your Choice Ingredients: 8 eggs (3 whole and 5 egg whites) 1 cup 1% milk 8oz uncooked or 4-5oz cooked sausage (I use turkey sausage) 1/2 cup your choice of shredded cheese (cheddar, swiss, pepper jack) 2 stalks of green onion 2 cups of frozen spinach Pepper to taste Place pan on middle rack in oven and bake for 50 minutes. Can be frozen and reheated for 30 45 seconds. Nutritional Information Per Mini Quiche: Approximately 90 calories 5 gm of fat 3 gm carbs 9 gm protein 0 fiber Enjoy!
